Cavite museum features age-old cuisines this Women’s Month

KAWIT, Cavite – As part of the Women’s Month celebration, the National Historical Commission of the Philippines (NHCP) will feature on Saturday (March 24) cooking demonstrations on Cavite’s heirloom recipes and dishes at this town’s Museo ni Baldomero Aguinaldo.

MBA curator Ahzel Miral disclosed to PNA on Wednesday that the 2 p.m. program is also designed to put Caviteǹean cuisine in the limelight.

“When one talks of regional cuisine, he or she would typically suggest Kapampangan or Bicolano; Caviteñean will probably not come to mind first,” Miral admitted.

But Cavite’s geography helped in shaping its culinary identity where the haciendas of Cavite produced abundantly, and served as food basket for Manila and nearby provinces, she added.

Saturday’s cooking demo will feature 2 Caviteǹean cuisines that maintain its popularity inside Cavite households until today which are the “Pipian” and “Kalandrakas.”

“Pipian” is a chicken dish similar to “kare-kare” but cooked in a simpler way.

“Kalandrakas,” on the other hand, is one of the famous Caviteǹean vegetable soup made up of beef with mixed vegetables. Normally cooked in the Southern Tagalog part of Luzon, this dish may also be cooked in pork and chicken.

According to Miral, the cooking demo will also give due recognition to the contributions of Filipino women in our society especially reflected through this year’s theme “We Make Change Work for Women.”

Kababaihan Kanluran Chapter, composed of women and housewives from Binakayan Village of this town, will partake in the said activity.

MBA is located in this town’s Binakayan Village and is open from Tuesday to Sunday, from 8 a.m. to 4 p.m.

MBA, as well as the other Cavite cluster museums namely Bonifacio Trial House in Maragondown Town and Museo ni Emilio Aguinaldo (MEA) will be closed from March 29 to 31 in view of the holy week observance. (Gladys Pino/PNA)
