Tortang Talong

By Brian Jules Campued

How do you like your talong? Sautéd with other vegetables? Or perhaps as a main ingredient in your favorite soup? Apparently, for Filipinos, eggplant is best paired with eggs, as the Filipino food tortang talong is among the “best rated dishes with eggplant,” according to TasteAtlas.

In the ranking of the international food website, updated last Aug. 16, the local eggplant dish landed at 9th place with a rating of 4.4 stars.

TasteAtlas described the “inexpensive and quickly prepared” tortang talong as made by dipping roasted whole eggplants into an egg mixture and then pan-fried until it resembles a crispy omelet.

“This versatile delicacy is easily adapted with additional ingredients such as ground meat and vegetables, and it is traditionally served accompanied by steamed rice and tomato or banana ketchup,” it said.

Turkey’s traditional dish hünkar beğendi topped the list; followed by China’s popular Sichuan-original seasoning mix yúxiāng; Italy’s parmigiana alla napoletana; the Middle Eastern dip mutabal; and another of Italy’s traditional dish, pasta ‘ncasciata. – av
